Lime And Avocado Pie

15 minutes prep, 2 hours refrigeration Cool and creamy, tart and delicious, avocados are the secret ingredient in this simple to make pie.
Ingredients:
- 1 cup avocado sieved pulp from approximately 2 avocados
- 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon grated lime zest
- ½ cup fresh lime juice
- 2 egg yolks
- 1 pinch salt
- 1 recipe pastry for a 9 inch single crust pie (or can use frozen, follow package instructions for single crust pie)
Get Started:
Step 1: Combine sweetened condensed milk, lime zest, lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens.
Step 2: Stir in avocado pulp.
Step 3: Pour filling into pie shell.
Step 4: Chill pie for several hours. Garnish with whipped cream, and serve.
