AVOCADO AND COCONUT ICE CREAM

Smooth, creamy and super easy to make with a blender and an ice cream machine.

Ingredients:

  • 3 cups milk
  • 2 cups unsweetened coconut milk
  • 1 ½ cups sugar
  • 1 lb ripe avocado pulp (about 1-2 avocados mashed completely)
  • 1 ½ teaspoon lime juice, or to taste

Get Started:

Step 1:  Puree all ingredients in a blender until smooth and creamy.  Taste to see if the mixture needs additional lime juice.  The purpose of the lime juice is to brighten the flavor.   You do not want the ice cream base to taste too acidic.

Step 2:  Chill mixture completely before adding to an ice cream machine.

Step 3:  Freeze in an ice cream machine according to manufacturer’s instructions.
