Avocado Soup

30 minutes. If served cold add additional 2 hours for refrigeration.This soup can be served either hot or cold and is equally delicious.
Ingredients:
- 4 cups chicken or vegetable broth
- 2 avocados, seeded
- 2 cups heavy (whipping) cream
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon white pepper
- ½ cup dry sherry
- 4 tablespoons fresh lemon juice
Get Started:
Step 1: Heat the chicken broth until very hot, but not boiling. Set aside.
Step 2: Cut the avocado into several pieces, place in the food processor or blender, and purée. Turn off the blender and pour in the whipping cream, followed by the hot chicken broth, cumin, salt, white pepper, sherry and lemon juice. Pulse a few times, just until mixture is blended. Taste and add more salt and pepper, if desired.
Step 3: Serve immediately, or chill for at least two hours and serve.
