Avocado And Orange Salad With Walnuts

15 minutesA refreshing, vibrant and delicious salad.
Ingredients:
- ¼ cup walnuts, chopped
- 1 Navel orange, sectioned
- ½ avocado, diced
- ½ cup jicama, diced
- Red Leaf or Romaine lettuce torn or cut into bite sized pieces, enough for 2 servings
Dressing:
- 1 ½ tablespoons walnut or peanut oil
- ½ tablespoon lemon or lime juice
- ½ teaspoon mint finely chopped
- ½ teaspoon honey or agave syrup
- freshly ground black pepper, to taste
Get Started:
Step 1: Toast walnuts on a hot, dry skillet, stirring frequently, until they are fragrant. Be careful not to burn. Remove from heat & let cool.
Step 2: Combine salad ingredients in a serving bowl & toss with the walnuts.
Step 3: In a small bowl, stir together the dressing ingredients. Pour over the salad & toss to coat. Serve immediately.
