AVOCADO AND ORANGE SALAD WITH WALNUTS

Ingredients:

  • ¼ cup walnuts, chopped
  • 1 Navel orange, sectioned
  • ½ avocado, diced
  • ½ cup jicama, diced
  • Red Leaf or Romaine lettuce torn or cut into bite sized pieces, enough for 2 servings

Dressing:

  • 1 ½  tablespoons walnut or peanut oil
  • ½ tablespoon lemon or lime juice
  • ½ teaspoon mint finely chopped
  • ½ teaspoon honey or agave syrup
  • freshly ground black pepper, to taste

 Get Started:

Step 1:  Toast walnuts on a hot, dry skillet, stirring frequently, until they are fragrant.  Be careful not to burn.  Remove from heat & let cool.

Step 2:  Combine salad ingredients in a serving bowl & toss with the walnuts.

Step 3:  In a small bowl, stir together the dressing ingredients.  Pour over the salad & toss to coat.  Serve immediately.
