Avocado And Cucumber Salad

10 minutesSimple to prepare. The cilantro and serrano add an interesting and unexpected touch to this salad.
Ingredients:
- 1 English cucumber peeled, halved lengthwise, and sliced thinly
- 2 cups grape or cherry tomatoes
- 2 cups torn lettuce of your preference
- 1 ½ cups avocado diced
- 1/3 cup thinly sliced red onion
- 2 tablespoons chopped fresh cilantro
- 3 tablespoons fresh lime juice
- 1 ½ teaspoons minced seeded serrano chile
- 1 ½ teaspoons extra virgin olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Get Started:
Step 1: Combine cucumber, tomatoes, lettuce, avocado, and onion in a large bowl.
Step 2: Combine the remaining ingredients (cilantro, lime juice, olive oil serrano, salt and pepper). Drizzle cilantro mixture over cucumber mixture and toss gently. Serve immediately.
