Avocado Mac And “cheese”

30 minutesYou won't believe how delicious this vegan version of Avocado Mac and Cheese is.
Ingredients:
- 1 ripe avocado
- 1 cup white beans
- 1 cup soy milk
- ½ cup nutritional yeast
- 1 tablespoon miso paste
- 1 teaspoon turmeric
- 1/2 pound whole wheat macaroni (you can substitue gluten free pasta)
- 1 cup frozen peas
- salt and pepper to taste
Get Started:
Step 1: Cook pasta and peas then set aside.
Step 2: Put the rest of the ingredients into a food processor or blender. Blend until creamy and smooth.
Step 3: Pour content of food processor or blender into a saucepan over medium heat to warm slightly. Once warm, toss with cooked peas and macaroni.
