Avocado And Tofu Veggie Wrap

20 minutesThis tasty vegetarian wrap nicely balances the crispness of the fresh vegetables with the smoothness of the tofu and avocado.
Ingredients:
- 1 pound medium firm tofu, pressed to get the moisture out
- ½ cup tahini
- 1 green pepper, finely chopped
- 3 scallions, finely chopped
- ½ cup parsley, finely chopped
- 2 tablespoons tamari or soy sauce
- cayenne pepper to taste
- 1 cup fresh spinach leaves, washed, dried, stems removed, chopped
- ½ cup alfalfa sprouts
- 1 avocado, peeled, pitted & sliced
- 6 whole wheat tortillas
Get Started:
Step 1: Put tofu in a bowl, mash and mix with tahini, beat until very smooth.
Step 2: Add green pepper, scallions, parsley & Tamari (not the spinach, bean sprouts, or avocado) and stir until thick.
Step 3: Lay out your tortillas, spread a thin line of tahini down the center of each.
Step 4: Top with 1/2 cup of the spread spread, and the tortilla evenly.
Step 5: Add sprout, spinach and a slice or so of avocado.
Step 6: Roll up & serve.
