Indian Inspired Guacamole

15 minutesThe warm flavors of the curry and cumin are cooled by the avocado in this delicious guacamole inspired by the spices of India.

Ingredients:
- 1 small white onion
- 1 clove garlic, minced
- 4 cups packed baby spinach leaves
- 4 avocados
- 3 tablespoons lemon juice
- ½ teaspoon salt, or to taste
- big pinch of cumin powder
- big pinch of Indian curry powder
- Garlic or plain naan bread, cut into wedges (could substitute pita bread, breadsticks, tortilla chips, veggies)
Get Started:
Step 1: Heat oven to 350 and bake the naan wedges for 10 minutes or so – until just crisp
Step 2: In a food processor combine avocados, spinach, lemon juice, garlic and blend until creamy.
Step 3: Put the avocado spinach blend into a bow. Next, add the onion, salt, cumin and curry powder and stir very well to combine.
Step 4: Serve with a sprinkling of curry powder on the top of the guacamole with the naan wedges.
