Edamame Avocado Sandwich Spread is packed with nutrients and flavor, an excellent and healthy alternative to your loved one’s peanut butter and jelly sandwiches.

Ingredients:

  • 16 ounces shelled edamame (soybeans), thawed if frozen
  • 1 ripe avocado, peeled and seeded
  • 2 tablespoons mayonnaise (can use soy substitute)
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon of kosher salt
  • ½ tablespoon ground coriander (you could substitute another spice)
  • 1 garlic clove, peeled
  • ¼  cup chopped cilantro or parsley (optional)

Get Started:

Step 1:  Put all the ingredients in the food processor or blender and blend until smooth.

Step 2:  Scrape the sides a few times and process again. Serve on bread or with crackers or vegetables.
