Edamame Avocado Sandwich Spread

15 minutesEdamame Avocado Sandwich Spread is packed with nutrients and flavor, an excellent and healthy alternative to your loved one’s peanut butter and jelly sandwiches.
Ingredients:
- 16 ounces shelled edamame (soybeans), thawed if frozen
- 1 ripe avocado, peeled and seeded
- 2 tablespoons mayonnaise (can use soy substitute)
- Juice of 1 lime (about 2 tablespoons)
- 1 teaspoon of kosher salt
- ½ tablespoon ground coriander (you could substitute another spice)
- 1 garlic clove, peeled
- ¼ cup chopped cilantro or parsley (optional)
Get Started:
Step 1: Put all the ingredients in the food processor or blender and blend until smooth.
Step 2: Scrape the sides a few times and process again. Serve on bread or with crackers or vegetables.
